Engine overheating 2008 IQ Turbo

2008 Polaris IQ Turbo 750
Advice would be appreciated, want to entertain myself over the Summer but wouldn't like to take the whole thing apart.
Engine is overheating, if left to idle for 30 min, stalls. Lumps of snow thrown on the engine block melt instantly and boil off, while thermostat reading never goes above 75 or so degrees F.
Coolant level is OK. Hoses going to / from the radiator are hot to touch, definitely more than 75 F.
Oil level is OK too.
Temp sensor to be replaced? Thermostat? Water pump? Other?

Pull Temp sensor, but you let it idle for 30 min? Why
